Hello Everyone,
What a great start to March we’re having. Lots of lambs already born and more to come. Our mother cows are getting ready for calving and we have even received a few new hens.

Our big news though is very close to our hearts and minds… sustainability.
We will soon have an environmentally FSC approved delivery packaging system. This system uses air and paper to keep cold air circulating in the box while being transported. It also reduces the amount of freezer packs needed for each delivery. Our delivery partners DPD also have some good news:
"The result is 100% carbon neutral parcel delivery across Europe. All at no extra cost to our customers. In 2019, we reduced CO2 emissions by 14% per parcel. We also topped the voluntary carbon offset market in the CEP sector. Through our leading tech and talented teams, the DPD Ireland Team will work tirelessly towards reducing our carbon emissions per parcel by 30% by 2025.” source: dpd.ie
This month, we are focusing on something we can sometimes find boring but can be livened up...mince. Here is a recipe for Asian mince which is simple, easy and low fat. What’s not to love..
Ingredients
SAUCE:
▢1 tbsp Hoisin Sauce (or sub with Oyster)
▢2 tbsp Oyster Sauce (or sub with 1 1/2 tbsp Hoisin)
▢1 tbsp Chinese cooking wine ( sake or any rice wine)
▢2 1/2 tbsp dark soy sauce
▢2 tsp white sugar
▢1/2 tsp sesame oil
▢1/4 tsp white pepper
STIR FRY:
▢1 tbsp oil
▢2 garlic cloves, minced
▢1 small onion, finely chopped
▢500 g Dexter beef mince
▢1/2 cup shallots / scallions , sliced, plus more for garnish
METHOD:
1.Mix Sauce together in a bowl
2.Heat oil in a large skillet over high heat. Add garlic and onion, cook for 1 minute or until onion starts browning.
3.Add Dexter beef and cook, breaking it up as you go.
4.Once the beef has all changed from red to brown, add Sauce. Cook for a further 2 minutes, or until Sauce has evaporated and beef is cooked. If you want the beef cooked more, add a splash of water and keep cooking.
5.Stir through shallots, then serve over rice, garnished with more shallots and sesame seeds, if desired. Or for a low carb, low cal option, try Cauliflower Rice
